Make your own Steak Fajitas using homemade seitan, cut into strips, or try one of the vegan beef strips available on the market.

Yield: 6 Fajitas
INGREDIENTS FOR FAJITAS
4 cups seitan strips or beefless vegan strips (see homemade seitan if you'd like to make your own, or use leftover BBQ Seitan)
1 package Simply Organic® Fajita Seasoning (about 1 oz), or the Mexican Seasoning of your choice
½ onion, sliced thin
2 large portobello mushrooms, sliced about ¼ inch thick (you can use 6 small mushrooms as well)
½ orange pepper, sliced
½ yellow pepper, sliced
1 can (14 oz.) black beans, rinsed and drained
4 tablespoons sweet corn chili salsa (we use Trader Joe's brand)
6 tablespoons salsa or pico de gallo
3 tablespoons chopped cilantro
6 flour tortillas
guacamole (optional)
chopped green onions (optional)
Oil for sautéing (I prefer grapeseed oil)
SALSA AND GUACAMOLE
3 medium tomatoes, diced
1 bulb garlic, chopped
2 green onions, chopped
1 cup cilantro, washed and packed tightly
juice of 1 lime
1 tablespoon Mexican Seasoning or Simply Organic® Salsa Mix
2 tablespoons Simply Organic® Mole Sauce Mix
¼ tsp sea salt
¼ teaspoon ground cumin
dash of ground cayenne pepper (optional)
Combine all the ingredients in a food processor or Blender. For guacamole, mash 4 ripe avocados and mix in juice of 1 lime, salsa, and salt to taste.
DIRECTIONS FOR FAJITAS
- Sauté the seitan (or veggie beef) strips in a little oil and 1/2 of the fajita seasoning packet. Cook until the strips are a little crispy and covered with seasoning. Remove the strips and set aside.
- In the same skillet, add a little more oil and sauté the onion, mushrooms, and peppers with the remaining Fajita seasoning. Cook until the peppers are slightly softened.
- In a small bowl, combine the black beans and the sweet corn chili salsa. You are now ready to make the fajitas.
- Layer the ingredients (from the bottom) on the tortillas as follows:
Seitan or Beef Strips
Onion/mushroom/pepper mixture
Beans (about 1 tablespoon)
Salsa (about 1 tablesoon)
Cilantro (about ½ tablespoon)
Green onions and guacamole (optional)
